Makes its own crust. It's MAGIC!!
4 eggs
1/4 cup margarine
1 cup white sugar
1/2 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups milk or half and half
1 cup coconut
1 teaspoon vanilla
Place all ingredients in blender at one time and blend until mixed together. Pour into a buttered 10-inch pie pan. Bake in a 350 degree oven for 1 hour. When done, crust will be on bottom, custard in the middle, and coconut on top - right where they belong.

Pear Lattice Coffeecake can jazz up your coffee breaks - at home or at the office.
PEAR LATTICE
COFFEECAKE
(Makes eight servings)
1 large, fresh USA Bartlett pear, cored and sliced
1/2 cup sugar, divided
2 tablespoons flour
1 teaspoon
grated orange peel
4 cups
buttermilk baking mix
1/2 teaspoon ground
cardamom
2 eggs
3/4 cup milk
Toss pear slices with two tablespoons sugar, flour and orange peel. Combine baking mix, six tablespoons sugar and cardamom. Beat together eggs and milk; add to dry ingredients and stir until mixed. Turn out on lightly floured surface and knead a few times. Cut off two-thirds of dough; pat on bottom and 1 inch up sides of 8-inch springform pan. Arrange pear slices over dough. Roll remaining dough into ropes and arrange, lattice-fashion, on top of pear slices. Bake at 375 F for 40 to 45 minutes or until golden.
